IDEAL DRINKING WINDOW
Now to 2022
Good rains in winter and spring and a cool summer saw a later harvest than normal across South Australia, allowing fruit to fully ripen without heat pressure and develop intense flavours.
Fruit was harvested and fermented seperately in small open and static fermenters under controlled temperatures. Must was pressed to oak for malolactic fermentation before being removed from oak for blending. The wine was targeted to be lighter, fresh and fruit driven.
