"The fruit for this Fumé Blanc looked exceptional in the vineyard. So much so that it deserved to be treated specially in the winery. I decided to split the parcel up into multiple smaller parcels. Each parcel was treated differently, I experimented with varying solids levels, fermentation types (tank vs barrel) and oak sizes. The resulting wine has a lot of complexity. Aromatic complexing oak is seen with underlying tropical, guava, elderflower and subtle snow pea notes. The round palate has texture and length with a pithy refreshing finish."
